Yummy! My mother in law makes this every year for Christmas and it is a requested favorite! My children ALL love this dish and, since we are all quarantined in our houses for Easter this year, I decided I would make this special dish for them!
Here's what we had on our plates tonight as we celebrated Easter!
Polish Sausage and Rice
Ingredients:
- 2 small boxes of Uncle Ben's Long Grain and Wild Rice
- 1 diced medium green pepper
- 1 medium chopped onion
- 4 cups sauerkraut (drained and rinsed)
- 8 tablespoons butter
- 1 Party Pack of Polish Sausage
- salt to taste (optional)
- Boil Sausage for 2 hours, slice up
- Cook rice according to box
- Saute pepper and onion in butter
- Mix all ingredients with sauted vegetables
- Salt, toss lightly
- Bake in covered casserole for 1/2 hour at 350 degrees
