I needed to make a snack for my son's class. It needed to be a Spring theme...and I wanted it to be cute! So...I came across this recipe at AllRecipes.com. I doubled the original recipe and was able to make 26 treats (a few turned out bigger). This is the perfect treat to bring along for your spring functions! I plan on making more for our Easter celebrations! They are easy and what I loved most is that the kids could help make them and the decorations are endless! I chose to use jelly beans and would have used Peeps, but my store was out of them (WHAT?!?). So, jelly beans was it for these fun bird's nests!  I got so many compliments.  My husband knows I am not very crafty, so he was shocked when he saw my little creations and has requested them to be brought to my mother-in-laws for Easter!
Here's the recipe (doubled to make 30...on the site, the recipe serves 15):

Ingredients

  • 1 (11.5 ounce) package milk chocolate chips
  • 1 tablespoon shortening
  • 1 (5 ounce) can chow mein noodles
  • 2/3 cup flaked coconut
  • 50 jellybeans

Directions

  1. In a saucepan, melt the chocolate chips and shortening over low heat; stir until smooth. Remove from the heat. Stir in the chow mein noodles and coconut until well coated. Divide into 15 mounds on a waxed paper-lined baking sheet. Shape into nests; press an indentation on the center. Place three or four jelly beans in each nest. Cool. Store in an airtight container.

I melted the chocolate chips and shortening in the microwave...stirring after each minute (took about three minutes).   At first they seemed like they couldn't possibly stick together, but as the mixture hardened, they stuck together great!

Totally making these for my son's bday treat next month!! Wondering if this would also work with pretzels instead of chow mien??

Hmmm...pretzels instead of chow mein? My daughter got really excited when she saw them finished because she thought they were pretzels. Let me know if you try them...I wonder how they would work...I bet it would work fine. My kids ended up loving these (they had never tried the chow mein noodles before this).
