Pick 'n Save Brings New Every Day to Your Table! YUMMY Curried Wild Rice and Squash Soup Recipe

And have they ever made my life that much easier!?!?!  I am in love with the new load-to-card coupons that Pick 'n Save now offers! Before I ran to the store, I sat down at my computer for a couple minutes to sift through the coupons that are available on their site.  It was quick and easy!  I simply clicked through to the offers I wanted to "Load to Card," did my shopping, scanned my card at checkout and voila!  Easy, instant savings!  That's my kind of shopping!

I have been wanting to make some homemade soup for a long time, but as many of you know...I am not the creative type!  I don't do much in the way of new recipes.  I stick to what I know my kids will eat.  Just because it's easy.  It's quick.  I know there will be no fuss!  BUT...I stepped out of the box on this one and I am so glad I did!  I made some DELICIOUS and really very easy Curried Wild Rice and Squash Soup!


Okay, I'm going to be honest with you all here...really honest!  I have never used Butternut Squash...in anything before.  I've never cooked with it...never even knew how to use it!  It looked like a gourd to me! So, when I went to the store to get squash for the soup, I went by the yellow squash.  I was going to grab four of those when my son said, "Mom, look!  That says Y-E-L-L-O-W Squash!  You need Butternut Squash!"  Well, he was right.  I had to go find someone who worked there to tell me where I would even FIND the Butternut Squash!


The first thing I did in this recipe was to peel, seed, and cube the squash.  I love yellow squash, so I went ahead and used both the butternut and the yellow squash.  You can see that the first butternut squash I cut into I kinda mutilated.  Lesson learned, went ahead and seeded the second squash FIRST before I cut into it!


My son and I both tried some of the Butternut Squash...pretty good!  He helped me to cube the rest and put them into a bowl.


I then gathered all of the other ingredients and got them ready to just throw into the slow cooker...who doesn't love a slow cooker?!?  I love mine and use it for almost all of my cooking.  It's easy and the smell wafting throughout the house throughout the day keeps me hungry!


I love including my children in the cooking process.  The more I can have them do, the happier we all are!  I basically prepared and measured most of the ingredients and allowed my son to put them all in the slow cooker.  He then stirred them up very well!  The final product?  Doesn't look too appealing to me, but the taste is absolutely amazing!  My kids gobbled up their bowls full of soup, so this recipe is definitely a keeper!



Ingredients:

  • 1 Cup Uncooked Wild Rice
  • 3 Cups Water
  • 2 1/2 Pounds Butternut Squash *Peeled, Seeded, and Cubed*
  • 1/4 Pound Yellow Squash *Peeled and Cubed*
  • 2 1/2 Cups of Chicken Broth
  • 1 Medium Granny Smith Apple *Peeled, Cored, and Cubed*
  • 2 Tablespoons Butter
  • 1 Medium Onion, Chopped
  • 1 Clove Garlic, finely chopped
  • 1 1/2 Teaspoons Curry Powder
  • 1 1/4 Teaspoons Salt
  • 1/2 Teaspoon Ground Black Pepper
  • 1/2 Pound of Bacon, Cooked and Crumbled
Directions:
  1. Peel, Seed, and Cube Squash
  2. Peel, Core, and Cube Apple
  3. Add all ingredients except bacon to slow cooker
  4. Stir
  5. Set on low and cook for 3 hours
  6. Mash up Squash in slow cooker
  7. Cook Bacon and crumble
  8. Add Bacon to slow cooker and stir
  9. Let cook for another hour
  10. ENJOY!
The thing I love most about this recipe is how you can tweak it to make it your own.  Next time around I might add more of a variance of squash.  Or maybe add more bacon.  I thought it was very good.  My husband said it was okay...he always needs more meat and he felt it needed another meat in there.  No complaints from my kids, though, so that was a win!

I absolutely LOVE squash, but my husband hates it. He says it's a texture issue, so I wonder if making this yummy curried soup would take that texture issue out of the equation? It looks so fresh and yummy! #client
