It's What's for Dinner: Grandma's Polish Sausage and Rice

Yummy!  My mother in law makes this every year for Christmas and it is a requested favorite! Whenever I see a sale on Polish Sausage I end up stocking up to have it on hand in case I need to bring a dish to pass...this is so good!

Here's what will be on our plates tonight!

Polish Sausage and Rice

Ingredients:

  • 2 small boxes of Uncle Ben's Long Grain and Wild Rice
  • 1 diced medium green pepper
  • 1 medium chopped onion
  • 4 cups sauerkraut (drained and rinsed)
  • 8 tablespoons butter
  • 1 Party Pack of Polish Sausage
  • salt to taste (optional)
Directions:
  1. Boil Sausage for 2 hours, slice up
  2. Cook rice according to box
  3. Saute pepper and onion in butter
  4. Mix all ingredients with sauted vegetables
  5. Salt, toss lightly
  6. Bake in covered casserole for 1/2 hour at 350 degrees 
I opt to make mine in a crock pot and leave it on warm all day.
