Red Gold Canned Tomatoes - Lasagna

Betsy and I had the opportunity to try out several varieties of Red Gold Canned Tomatoes.  There are many different flavor options to choose from, which allow you to create any number of potential meals.

The first thing I decided to make was lasagna, which I had never made before.  I searched the internet for a recipe and made some slight adjustments to come up with the following dish...

I used three different kinds of Red Gold Canned Tomatoes, a 14.5oz can of Tomato Sauce, a 14.5oz can of Stewed Tomatoes, and a 10oz can of Tomato Paste.


I began with one pound Italian Sausage, a medium onion - chopped, and some garlic powder, I put them in a skillet with a little olive oil, and cooked it until the meat was browned.


Meanwhile, chop the stewed tomatoes, and add them to the skillet along with the tomato paste, and half the tomato sauce.  Cover and then simmer for 15 minutes, stirring occasionally.


In a large bowl, whisk together two eggs, then mix in two cups cottage cheese, 1/2 cup parmesan, and parsley, salt, pepper, and seasoning salt to taste.


Now you are ready to build your lasagna.  Spread the remaining tomato sauce in the bottom of a 13x9 pan.  Cover the bottom of the pan with lasagna noodles, overlapping them a little bit.  Spread half the egg and cottage cheese mixture evenly on top of the noodles.  Sprinkle 1 cup shredded mozzarella and 1 cup shredded cheddar on top of egg and cottage cheese layer.  Spread half the meat sauce evenly over the shredded cheese layer.  Repeat the layering with your remaining ingredients.  Then sprinkle the top with parmesan cheese.


Bake in a 375 degree oven for 30-35 minutes, watch for the sauce to bubble around the edges.  Allow the lasagna to sit for 10 minutes after baking before cutting into it.


The lasagna turned out great, it held together after removing it from the pan, and was very good tasting.  The Red Gold Canned Tomatoes worked out very well.  The lasagna was very good, everybody liked it, even Betsy's parents.  I am pretty pleased with my first lasagna effort.  I am very much looking forward to making it again and sharing it with friends and family.
